Give the sun a buffer so it doesn't blow out

Don't put the bare sun full and at full strength in the middle of the frame; give it something to shine through. Hide the sun partly behind your subject, a tree, a building or the horizon, or add a thin veil: haze, mist, light cloud or dust in the air. That tempers the intensity and gives you a glow, god rays or a sunstar instead of a white hole.

Backlight falling through mist, steam, spray or dust also glows nicely, which adds depth to the image. Name that buffer explicitly in your prompt, because it's exactly what keeps a bright background readable.

Choose a low sun: golden hour works with you

A low sun is far easier to keep in balance than a harsh sun high in the sky. Around sunrise and sunset the light is warmer and less intense, the shadows are long and the contrast is lower. That's exactly why golden hour is so popular for backlight: the rim light traces your subject without instantly burning out the sky.

So in your prompt, prefer "low morning or evening sun" over "harsh midday sun overhead." A midday sun directly above your subject gives the hardest contrast and the biggest chance of a blown-out frame.

Fix a blown-out sky afterward or render again

If the sky stays a white patch despite your prompt, you don't have to rebuild the whole image. With inpainting in the photo editor you mask only the sky and have it filled in again with color and cloud detail, while your subject stays intact.
